Baked Brie - stuffed with marmalade caramelised onion
This little 'one pot wonder' - is one of my 'home alone' and can't be bothered cooking numbers. It is something you can make ahead, pop in the fridge and bake later, literally 10 minutes before your favourite tv show..... to be honest its not even really a recipe
Ahead of time caramelise an onion with marmalade (perhaps even make a jar of this to keep in your fridge - cos it goes well with lots of meals - think pizza topping, burger filling etc). Split a Brie (or Camembert) in two and fill with the caramelised onion mix. Wrap in fig (or grape) leaves and secure (baking paper will also do). Place in the fridge until required.
Bake until soft and gooey. Serve with crackers, toast - whatever you prefer...
