Cheesey Smashed Potatoes
I was given a bag of 'Piccolos' - Piccolo is Italian for 'little', or probably closer to 'little one'. Which is a perfect name for these little potatoes. When I grow them I ALWAYS racoon around the plant and try to get some of these guys out, before the potato plant has finished growing, but without disturbing the plant. (I will be doing a blog post very soon on growing potatoes)
The little 'racooned' ones are the most delicious morsel of a potato, and just boiled lightly and served with butter is how you have to eat the first ones.... like the first asparagus. Honestly it is almost a different vegetable from the full grown potato.
Then you go on to cook other things with them, like this little number... so so so simple. Just boil them with a little salt for 10 minutes or so (I chuck in a twig of rosemary you can chuck in anything you like) then place them on a baking tray and squish them flat (kids love doing this part). Up to this stage can be done in advance, when you are ready - heat your oven and load the toppings onto you potatoes.... again its up to you cheese, thyme, salt and pepper are shown here but the choices are endless and can be dictated by what is in your fridge.... don't go buy something - just use something up. Although sour cream and bacon is an excellent idea if you do want to buy something!!
