You asked for it... so here it is...
I posted this on my Insta a while back - just one of our casual / easy dinners - and had a bunch of requests for the recipe ....
3 Tbsp Olive Oil
1/2 cup milk
1/2 cup water
Mix these ingredients together with a fork. Add to the dry ingredients (also already mixed together)
1 1/2 cup flour
2 tsp Baking Powder
pinch salt & pepper (to taste)
1/2 tsp spice (* I use paprika - but see my note at the bottom)
2 cups Corn (fresh cut from the cob or frozen) Now this is where you can take some license and add other veges - i.e. 1 cup of corn and one cup of pretty much whatever you want diced into similar sizes - bacon is also good added in here too... #justsayin !
Heat up your deep fryer and dip your spoon into the hot oil - and scoop balls of the mixture - they should slide off the spoon into the oil. Let it cook for 2 or 3 minutes until it is a lovely golden colour. Then remove and drain on paper towels. Sort out a dipping sauce and you are good to go!!
*There are variations - sometimes I add a pinch of paprika, sometimes it is chinese five spice or fresh coriander - but really just add a flavour that you enjoy (which is most likely what you have in your cupboard already).
