Ginger Lolly Cake
Lolly Cake - is one of those super sweet treats - so easter is the perfect time to bring out this classic!!! The only difference here is that I was sent a sample box of Nairns Oat Biscuits - this recipe was inspired by their 'stem ginger' biscuits.
150g Eskimo Lollies
200g Stem Ginger Oat Biscuits (Nairns)
200g Condensed Milk
200g Desiccated Coconut
Bash the biscuits in their little packets until they are a rough crumb, break up the lollies and add.
Heat the butter and condensed milk, and tip over the biscuit crumbs and mix thoroughly.
Form into logs or balls (whatever) and roll in the coconut. Then chill for an hour or so (and store it in the fridge).
