Lemon Ricotta Doughnuts

Under the guide of 'Family Recipes' you can probably appreciate the appearance of ricotta in most southern Italian cooking - this recipe is an old family favourite and the lemon can be substituted for other citrus flavours, or even a splash of lemoncello or armaretto....  As you can probably understand - I usually make the adult version with the Armaretto, so this is with fresh garden lemons and has now taken prime spot amongst my favourites

Its a very simple recipe - throw all the ingredients in a bowl - stir together and good to go - I really like this sort of cooking sometimes, very uncomplicated and rustic, and a beautiful end product is insanely good for the soul.

130g Self Raising Flour
2 tbsp Caster Sugar
1/2 tsp Baking Powder
Zest and Juice of 1 Lemon
250g Ricotta
2 eggs
pinch salt
 

Once these are fully, but lightly mixed, drop a teaspoon of the batter into hot oil. They should take just a few minutes each side.

Dust with icing sugar or drizzle with fragrant honey...
