Coconut Raspberry Mousse
This is my Vegan Food Fair Challenge...... make a vegan dessert. So straight for my Deliciously Ella book 'Every Day'. Coconut and Raspberry Mousse seemed to be pretty straight forward, and the ingredients were already in the house.... This is made with raspberries, but I think that any berries could easily be used.
Grab a Food Processor and throw in ...
100g Coconut Cream
1 Avocado (flesh only)
1 Vanilla Bean (seeds only)
3 T almond Butter
2 T honey
Blend it until smooth and then put it into the bowls or glasses you want to serve it in and chill for an hour or so.....
Easy 'make ahead' kind of dessert - it was pretty good for breakfast too with a little granola on top.
