An old friend..... Corn and Polenta Nuggets
I had forgotten this old friend of mine until recently.... A friend was discussing small children (hers is two) and the art of disguising new items (namely veges) into their diets and this recipe became a treasure of mine many years ago... It was the trojan horse, and many a new vegetable or flavour was slowly added to this recipe without protest from then my 'under five'.
1/2 tsp Salt
1/2 cup Polenta
In a pot bring the water to a boil, add the polenta and salt, stir gently until it is a gluggy - porridge consistency.
Take it off the heat and add:
1//2 cup corn kernals
1/4 cup Spring Onions (finely chopped)
1 tbsp Parsley (finely chopped)
1 clove garlic (minced)
Now leave it to cool.
This part can be done ahead (a day or so) if you want a quick-fire dinner for the next night)
Sift in the following ingredients:
1/3 cup Flour
1/4 tsp Baking Powder
1 Egg (lightly beaten)
salt and pepper to taste.
Heat Oil to deep fry - I generally use a light flavoured oil for this - rice bran or similar.
Difficult to describe - but it has a crunchy texture with an underlying popcorn flavour which had him hooked. While it is deep frying - I think it is one of the healthiest 'nuggets' on the planet. But my primary use for this recipe was as a 'smuggling' agent for new tastes and flavours, as it appeared in a 'treat' food that was already perfectly acceptable.
As I have alluded, you can substitute the corn, (also swap the herbs) to fit with your choices of veggie as long as the quantity remains the same - the recipe is very forgiving.
