Yakitori Piper (Garfish)
This recipe has come about because our summer beach holiday has had an strong element of fishing, and a few kilos of piper is actually alot of fish..... not often easily available at home because they are generally considered 'bait' fish ... BUT they are great eating!! So here is a really simple BBQ recipe using Piper.
First up - prepare the yakitori sauce, for this I had a somewhat reduced pantry to work from, but this little yakitori recipe worked out just as well as any other I have made....
1 cup brown sugar
1/2 cup soy sauce
1/2 cup white wine
Simmer until it is slightly thickened and caramelised, then take off the heat and leave to cool.
While this is simmering, fillet the Piper and thread onto the (presoaked) skewers.
Then brush over several coats of the yakitori sauce and leave to marinate for a while.
Best cooked on the BBQ or grill - I serve them with an Asian style apple slaw.
