Gingernut Cookies "Ginger Nuts"
Gingernuts is a firm family favourite in out house, so after a very busy week - and the baking was well gone and complaints to management were being made - I thought that I take one from the book ...... and I was not disappointed!!!
1 cup Golden Syrup
1 cup Sugar
1 cup Butter
3 1/2 cups plain flour
1 dsp Ground Ginger
1 tsp Baking Soda
1/2 tsp salt
Heat the first three ingredients and add to the dry ingredients. Let it cool a little and roll the mixture into balls, then flatten the tops slightly - (I used a fork) cook in a slow oven (about 150C)
Leave on a wire rack to cool.
Stunning - and very, very easy - they make the house smell sweet, gingery and 'christmasy' warm!! - they are a little soft straight out of the oven - but as they cool they crisp up - just like the bought ones. I mean really like the bought ones - once cooled they are 'crunchy' hard - like the bought ones!!
